Piña colada

This drink can be made frozen or just shaken..most people think of being on a tropical island with this drink and the frozen version, but the unfrozen is equally enjoyable.

Ingredients: since people use a variety of containers and not everyone knows exact measurements..especially after having a few drinks..I like to use the parts rather than ounces suggestion.

  • 1 part Light Rum (dark may be used but most people prefer the taste of light)
  • 2 parts Pineapple (fresh or juice or a combination of both may be used)
  • 2 parts cream of coconut
  • ice to be added last to blender

Mixing instructions:For Frozen Variety

Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a short length of time. Pour into glass or plastic ware of your choice and serve with a straw. Adding wedge of pineapple is always nice, but a simple cherry will do in a pinch.

A nice touch especially for the UN-frozen variety or for the frozen is to rim the glass with either coconut or even more delicious toasted coconut..to do this, before pouring the drink into the glass pour either a small amount of honey, cream of coconut, or pineapple juice into a small dish making a circle pattern. Then turn the glass (empty) upside down and turn back and forth to coat rim with one of the above, then in another plate or bowl have your toasted or plain coconut and then dip the first moistened rim into the coconut and then turn right side up and now pour your mixture into the glass.

This is the type of drink where even men won't usually mind if you decorate it with cute umbrellas and it does add to the festivity of the drink.

If making the UN-frozen variety use the same ingredients but rather than blended just shake VERY well (and use pineapple juice rather than fresh pineapple)
